Zucchini Muffins
Ingredients
- 2 cups shredded Zucchini
- 1 large banana
- 1/4 cup (56g) coconut oil
- 12g of sugars (honey, syrup, etc)
- 1 tsp vanilla extract
- 2 eggs
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups whole wheat flour
Instructions
- Shred, drain, dry Zucchini
- Mix banana, coconut oil, sweetener, vanilla until smooth
- Mix in eggs
- Add in cinnamon, baking soda, baking powder, and salt
- Mix in flour
- Mix in zucchini
- (Optional) Add water if batter is super thick
- Bake for 20-25 minutes at 375F
