Tortilla Soup
Ingredients
- 3 15oz cans beans (black, pinto, kidney, any combo)
- 1 15oz can corn
- 3 cups vegetable broth
- 3 14.5 oz cans diced tomatoes
- 1 4oz can green chiles
- 1 6oz can tomato paste
- 1/2 tsp cayenne
- 2 tsp chili powder
- 1 tbsp cumin
- 1 tsp garlic powder
- 2 tsp salt
- 1/2 cup sour cream
- 1/4 cup heavy cream or whole milk
- tortilla strips
Instructions
- Put everything except sour cream and heavy cream in instapot
- Put on lid and close vent
- Put on manual operation, high pressure, 5 minutes
- Takes about 40 minutes to come up to pressure before the 5 minute countdown
- Let it sit for 5 minutes after timer is up
- Release pressure
- Stir in heavy and sour cream
- Serve!
