Gnocchi with Kale, Cilantro, and Cashew Pesto
Ingredients
- 24 oz gnocchi
- 1.5 cups / 7.5 oz raw cashews
- 6 cups kale
- 3 cups cilantro
- 3 tsp minced garlic
- 1 cup olive oil
- 1.5 tsp lemon juice
- 3/4 tsp salt
- 1.5 cups parmesan
Instructions
- Put all ingredients (except gnocchi) in food processor and blend until smooth
- Cook gnocchi
- Combine
