No Sugar Carrot Cake

Ingredients

Frosting (Optional)

Instructions

  1. Heat oven to 350F
  2. Butter an 8x8 cake pan and line with parchment paper
  3. Sift / mix 2 cups flour, 2.5 tsp baking powder, 1.5 tsp cinnamon, 0.5 tsp salt
  4. Stir in 3/4 walnuts (or macadamia nuts)
  5. "Just melt" 4oz butter
  6. Stir in 1/2 cup dates (mix in food processor to make a "date butter")
  7. In a separate bowl, mash/stir 3 ripe bananas with 1.5 cups grated carrots
  8. Stir in the "date butter"
  9. Stir in 1/2 cup yogurt and 2 eggs
  10. Add the flour mixture and stir until everything just comes together
  11. Spoon into pan
  12. Bake 50-60 minutes until a toothpick tests clean
  13. Remove and let cool

Frosting (Optional)

  1. Whip together 6 oz cream cheese and 3 tbsp agave nectar (or syrup)
  2. Frost the cake when it is completely cool
