No Sugar Carrot Cake
Ingredients
- 2 cups whole wheat flour
- 2.5 tsp baking powder
- 1.5 tsp cinnamon
- 0.5 tsp salt
- 3/4 cup walnuts or 3/4 cup dry roasted macadamia nuts
- 4 oz butter, melted
- 1/2 cup dried dates, seeded, finely chopped into a paste
- 3 ripe bananas
- 1.5 cups grated carrots
- 1/2 cup plain yogurt
- 2 eggs, lightly whisked
Frosting (Optional)
- 6 oz cream cheese (room temp)
- 3 tbsp agave nectar or 3 tbsp maple syrup
Instructions
- Heat oven to 350F
- Butter an 8x8 cake pan and line with parchment paper
- Sift / mix 2 cups flour, 2.5 tsp baking powder, 1.5 tsp cinnamon, 0.5 tsp salt
- Stir in 3/4 walnuts (or macadamia nuts)
- "Just melt" 4oz butter
- Stir in 1/2 cup dates (mix in food processor to make a "date butter")
- In a separate bowl, mash/stir 3 ripe bananas with 1.5 cups grated carrots
- Stir in the "date butter"
- Stir in 1/2 cup yogurt and 2 eggs
- Add the flour mixture and stir until everything just comes together
- Spoon into pan
- Bake 50-60 minutes until a toothpick tests clean
- Remove and let cool
Frosting (Optional)
- Whip together 6 oz cream cheese and 3 tbsp agave nectar (or syrup)
- Frost the cake when it is completely cool
